Opened in 2023 in the east-end neighbourhood of Hochelaga, Aube is technically a bakery with a cafe inside, producing some of the city's finest sourdough, viennoiseries, and grilled cheese on house-baked bread. Jungle beans power a precision espresso program that pairs beautifully with the rotating pastry case in a bright, airy space that quickly became a neighbourhood anchor.
