Founded in 2011 by Philipp and Yael Schaefer, Cafelix is credited with shaping Tel Aviv's specialty coffee movement from the ground up. Beans are roasted daily at their Jaffa roastery and the Levinsky Market counter, tucked among spice merchants on Merkhavya Street, is a standing-room pour-over stop that draws regulars from across the city. Two rotating single-origin espresso options are always on the grinder, with baristas trained to explain provenance and extraction. This is where the city's third-wave story truly began.
