Coava's flagship at 1300 SE Grand Ave occupies a soaring industrial space it shares with a bamboo furniture maker, a pairing that became one of Portland's most photographed cafe interiors. Matt Higgins founded Coava in 2008 with a strict single-origin, never-blend philosophy, naming coffees after the farmers who grow them.
