Founded in 2017 by musicians Pablo Tokatlian and Agustin Caro, Cuervo has grown to six locations across Buenos Aires while maintaining a hand-crafted sensibility. Since 2021 the team roasts its own beans in Chacarita under the Cumbia blend line, pairing espresso and filter programs with a brunch menu that spans avocado toast to chipa and vegan pastries. The El Salvador 4580 Palermo Soho flagship draws a loyal, multigenerational crowd.
