Curto Cafe runs an unconventional model inside a gallery off Rua da Assembleia: customers order an espresso, look at the blackboard listing the real costs of every ingredient and every hour of labor, then pay what they judge the coffee is worth. Beans are sourced from Espirito Santo and brewed on La Marzocco machines by the owner-barista Sergio. The honesty experiment has kept it a beloved Centro institution for over a decade.
