Cafeologia is an education-first project from Chiapas that teaches the full coffee production chain from field to cup, with its Coyoacan cafe on Berlin near Centenario opening to critical praise in 2025. The Infatuation highlighted it for its pour-over program and traditional Chiapas beverages including tascalate and jungle-cacao hot chocolate. Producer photos on each bag and a visible coffee library make the educational mission impossible to miss.
