Started by a Seattle roaster working out of his garage in 2008, Kuma has built a national reputation for sourcing rare microlots, handpicked from smallholder farms and roasted in tiny quantities that sell out quickly. The Thorndyke Avenue roastery runs a direct-to-consumer model with limited cafe hours, making it more of a discovery destination than a daily stop.
