Harrysson Neira won Peru's National Barista Championship in 2013 and built this Miraflores lab at Ca. Enrique Palacios 1074 to showcase the country's finest single-origin lots, sourcing directly from Cusco, Cajamarca, and Villa Rica. The in-house roastery also supplies Central, one of the world's most celebrated restaurants. Pastry chef Zara Alanya provides the baked accompaniments, and seasonal cold brew recipes rotate with each new harvest.
