Florence holds a singular position in Italian coffee culture: it is where the classic espresso bar tradition runs deep and where the third-wave movement found its Italian footing earliest. Ditta Artigianale, founded in 2013 by champion barista Francesco Sanapo, was among the first specialty cafes in the country to bring filter coffee and single-origin roasting to a market that had long worshipped the quick shot at the standing bar.
The Oltrarno district, with its quarters of San Frediano and Santo Spirito, forms the heart of the independent cafe scene. South of the Arno, the streets carry a younger, locally-rooted crowd alongside old neighbourhood bars. The Santa Croce quarter on the north bank, anchored by the Sant'Ambrogio market, adds riverside bakeries and several flagships within walking distance.
What makes Florence distinctive is the persistence of genuinely historic institutions alongside the newcomers. Caffe Gilli has operated since 1733 and Caffe Rivoire since 1872, while local roasters give the city a coffee identity that is genuinely its own rather than a transplant of London or Melbourne styles.
