The ca phe sua da, a dense shot of Vietnamese Robusta dripped through a metal or cloth phin filter and poured over sweetened condensed milk and ice, has fuelled Saigon since the French colonial period, and it remains the drink of choice at plastic-stool street carts, family-run shophouses, and late-night hems alike. The apartment cafe phenomenon, concentrated at the nine-storey building at 42 Nguyen Hue where a former residential block now holds more than thirty independent cafes on its upper floors, distils something essential about how the city repurposes its architecture for social life. Cheo Leo, operating since 1938 in a District 3 alley using wood-fire roasting and cloth-filtered phin brewing, represents the oldest surviving thread of that culture.
From the late 2010s, a determined specialty wave has layered on top of this foundation without displacing it. Roasters such as 96B, Bosgaurus, La Viet, The Hummingbird, and Every Half now supply a network of quality-focused bars across Districts 1, 3, and the Thao Dien quarter of what was District 2. International brands including % Arabica operate alongside homegrown Vietnamese chains like Phuc Long and Katinat, creating a coffee landscape dense enough to sustain multiple daily visits across radically different drinking registers. The Workshop Coffee, which opened at 27 Ngo Duc Ke in the early 2010s, is generally credited as the original catalyst for specialty coffee in the city.
The strongest geographic cluster for specialty coffee remains District 1, where the Opera House precinct, the Ly Tu Trong corridor, and the 42 Nguyen Hue building concentrate more good coffee within walking distance than almost any comparable area in Southeast Asia. Thao Dien has emerged as a second pole, drawing roasters who need space for larger facilities and an expat-heavy residential crowd willing to pay for filter-focused menus. District 3 rewards slower exploration, with the French villa setting of The Hummingbird on Vo Thi Sau, the farm-direct counter at La Viet, and the irreplaceable living relic of Cheo Leo all sitting within a few kilometres of one another.
