Madrid's specialty coffee scene took shape later than London or Copenhagen but has matured with remarkable speed since Toma Café pioneered in-house roasting in 2011. Today the capital hosts a dense cluster of third-wave bars spanning Malasaña and Chamberí in the north, through Chueca and Huertas in the center, down to the diverse streets of Lavapiés and La Latina in the south, with younger outposts pushing into Salamanca, Retiro, and Arganzuela.
The city's baristas have earned international recognition, with Pablo Caballero and Nolo Botana of Hola Coffee training SCA-certified professionals and supplying beans to much of the scene. Multi-roaster bars sit alongside roaster-owned flagships, and the recent wave of Arab and Scandinavian-influenced cafes has added flavor diversity that separates Madrid from other Spanish cities.
