Panama is home to Geisha (also spelled Gesha), the most celebrated and expensive coffee variety in the world. First cultivated at altitude in the Boquete and Volcán regions of Chiriqui Province, Panamanian Geisha produces a cup of uncommon clarity, with jasmine aromatics, stone fruit sweetness, and a tea-like body that set auction records year after year. The variety gained global recognition at the 2004 Best of Panama competition when Hacienda La Esmeralda's lot outscored everything else in the field, and the country has never looked back.
Panama City's specialty coffee scene has grown rapidly since the mid-2010s, anchored by Casco Viejo in the historic old quarter and spreading into El Cangrejo, San Francisco, and the eastern business districts of Coco del Mar and Costa del Este. The scene is distinguished by the unusually direct connection between café and farm: several of the city's best bars are either owned by farming families or maintain named relationships with specific fincas in Boquete. This farm-to-cup traceability, rare even in the world's most developed coffee cities, gives Panama City an authenticity that sets it apart from more generic third-wave markets.
Casco Viejo concentrates the highest density of quality, with half a dozen specialty bars within a short walk of each other along Avenida B and the surrounding colonial streets. El Cangrejo on Via Argentina offers a more neighbourhood-focused alternative with strong all-day cafés and a developing micro-roaster presence. Further east, the bars in San Francisco, Coco del Mar, and Costa del Este cater to a professional residential crowd with larger, design-forward spaces and full brunch menus. The scene is moderate in size but high in conviction, with virtually every notable café in the city serving traceable Panamanian coffee and most featuring Geisha in at least one brew format.
