France · 39 hand-picked cafés
Paris transformed its coffee culture more dramatically over the last fifteen years than almost any other European capital. A wave of roaster-led cafes starting around 2010 overturned the city's long tradition of weak espresso served in a hurry, and today the French capital holds its own against London, Berlin, and Copenhagen for the quality and diversity of its specialty scene.
The Canal Saint-Martin corridor in the 10th arrondissement remains the spiritual home of the movement, with Ten Belles, Holybelly, and the Belleville Brulerie flagship drawing regulars from across the city. The Marais, South Pigalle, and the slopes of Montmartre have each developed distinct characters: the Marais rewards slow discovery of tiny, perfectionist addresses; SoPi combines roastery terraces with a creative neighbourhood energy; Montmartre mixes serious filter bars with destination brunch spots.
What makes Paris unusual is the depth of its roasting culture. Many of its best cafes are also roasteries, and the beans sourced from Belleville, Lomi, Coutume, Partisan, KB, and Substance travel far beyond the city limits. Visiting the cafes attached to these roasteries is the most direct way to understand what Parisian specialty coffee has built.
