Tokyo, by the cup
Japan · 51 hand-picked cafés
Tokyo is the most patient coffee city in the world. The pour over here is theater: scales out, kettles weighed by gram, timers visible. A V60 takes four minutes and nobody is in a hurry.
The wave came late and stayed. Specialty roasters cluster around the river neighborhoods, Nakameguro and Sangenjaya, with outposts pushing further west each year. You can drink a single-origin filter in the morning and an Italian-trained espresso at lunch and feel like you visited two cities.
Go early. Saturdays after 1pm queue everywhere. Walk between cafés, the train ride flattens the experience.
